Traditional Lamb Rogan Josh Servings: 4

Ingredients:
- Lamb (shoulder or leg), cubed: 500g
- Onion: 1 large, finely chopped
- Garlic: 3 cloves, minced
- Fresh ginger: 2cm piece, grated
- Tinned chopped tomatoes: 400g
- Natural yogurt: 100g
- Ground cumin: 1 tsp
- Ground coriander: 1 tsp
- Ground turmeric: ½ tsp
- Ground paprika: 1 tsp
- Ground cinnamon: ½ tsp
- Kashmiri red chilli powder: 1 tsp (or adjust to taste)
- Salt: 1 tsp
- Honey: 1 tbsp (optional, for a touch of sweetness)
- Vegetable oil: 2 tbsp
- Fresh coriander leaves: A handful, chopped
- Rice: To serve

Instructions:
- Heat the oil in a large pot over medium heat. Add the chopped onion and sauté for 5-7 minutes until softened.
- Stir in the garlic and ginger, and cook for another 1-2 minutes until fragrant.
- Add the cubed lamb to the pot and brown the pieces on all sides for 5–7 minutes.
- Stir in the tinned tomatoes, followed by all the spices (cumin, coriander, turmeric, paprika, cinnamon, and chilli powder), salt, and honey (if using).
- Pour in enough water to just cover the lamb, bring to a simmer, and cook for 1-1.5 hours, or until the lamb is tender. You can also cook in a slow cooker for a richer flavour.
- Once the lamb is tender, stir in the yogurt and cook for another 5 minutes until the sauce thickens and is creamy.
- Garnish with freshly chopped coriander leaves before serving.
- Serve with basmati rice and a side of cucumber raita or a fresh salad.
