Traditional Lamb Rogan Josh

Servings: 4

Ingredients:

  1. Lamb (shoulder or leg), cubed: 500g
  2. Onion: 1 large, finely chopped
  3. Garlic: 3 cloves, minced
  4. Fresh ginger: 2cm piece, grated
  5. Tinned chopped tomatoes: 400g
  6. Natural yogurt: 100g
  7. Ground cumin: 1 tsp
  8. Ground coriander: 1 tsp
  9. Ground turmeric: ½ tsp
  10. Ground paprika: 1 tsp
  11. Ground cinnamon: ½ tsp
  12. Kashmiri red chilli powder: 1 tsp (or adjust to taste)
  13. Salt: 1 tsp
  14. Honey: 1 tbsp (optional, for a touch of sweetness)
  15. Vegetable oil: 2 tbsp
  16. Fresh coriander leaves: A handful, chopped
  17. Rice: To serve

Instructions:

  1. Heat the oil in a large pot over medium heat. Add the chopped onion and sauté for 5-7 minutes until softened.
  2. Stir in the garlic and ginger, and cook for another 1-2 minutes until fragrant.
  3. Add the cubed lamb to the pot and brown the pieces on all sides for 5–7 minutes.
  4. Stir in the tinned tomatoes, followed by all the spices (cumin, coriander, turmeric, paprika, cinnamon, and chilli powder), salt, and honey (if using).
  5. Pour in enough water to just cover the lamb, bring to a simmer, and cook for 1-1.5 hours, or until the lamb is tender. You can also cook in a slow cooker for a richer flavour.
  6. Once the lamb is tender, stir in the yogurt and cook for another 5 minutes until the sauce thickens and is creamy.
  7. Garnish with freshly chopped coriander leaves before serving.
  8. Serve with basmati rice and a side of cucumber raita or a fresh salad.
