Sticky Sweet-Savoury Honey Garlic Pork with a Rich Caramelized Finish

Servings: 4

Ingredients

  1. 700 g pork shoulder or pork belly, cut into bite-sized cubes
  2. 4 cloves garlic, finely minced
  3. 1/3 cup honey
  4. 1/4 cup soy sauce
  5. 2 tablespoons brown sugar
  6. 1 tablespoon rice vinegar
  7. 1 tablespoon oyster sauce
  8. 1 teaspoon fresh ginger, grated
  9. 1 tablespoon vegetable oil
  10. 1/2 teaspoon black pepper
  11. 1/2 teaspoon chili flakes (optional)
  12. 1 tablespoon cornstarch
  13. 2 tablespoons water
  14. 2 green onions, sliced (for garnish)
  15. Sesame seeds, for garnish

Instructions

  1. Pat the pork pieces dry with paper towels and season lightly with black pepper.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the pork and sear for 6–8 minutes, turning occasionally, until browned and slightly crispy on the edges.
  4. Reduce heat to medium and add the minced garlic and grated ginger. Cook for about 1 minute until fragrant.
  5. In a small bowl, whisk together honey, soy sauce, brown sugar, rice vinegar, and oyster sauce.
  6. Pour the sauce over the pork and stir to coat evenly. Let it simmer gently for 5–7 minutes until the sauce begins to thicken and caramelize.
  7. Mix cornstarch with water to create a slurry, then add it to the skillet. Stir continuously for 1–2 minutes until the glaze becomes glossy and sticky.
  8. Sprinkle chili flakes if desired and continue cooking for another minute.
  9. Remove from heat and garnish with sliced green onions and sesame seeds before serving.
