Spicy Szechuan Dan Dan Noodles

Ingredients

  1. 300 g fresh or dried noodles
  2. 200 g ground pork (or beef)
  3. 2 tablespoons oil
  4. 2 cloves garlic, minced
  5. 1 teaspoon ginger, minced
  6. 2 tablespoons soy sauce
  7. 1 tablespoon Shaoxing wine (optional)
  8. 1 tablespoon chili oil
  9. 1 tablespoon sesame paste or peanut butter
  10. 1 teaspoon Sichuan peppercorns, ground
  11. 1 teaspoon sugar
  12. 1/2 cup chicken or vegetable broth
  13. 2 tablespoons preserved mustard greens (optional)
  14. 2 green onions, sliced
  15. Crushed peanuts (for garnish)

Instructions

  1. Cook the noodles according to package instructions, then drain and set aside.
  2. Heat oil in a pan over medium heat.
  3. Add garlic and ginger, sautéing until fragrant.
  4. Add ground pork and cook until browned, breaking it apart.
  5. Stir in soy sauce, Shaoxing wine, and preserved mustard greens if using.
  6. In a bowl, mix chili oil, sesame paste, sugar, Sichuan peppercorns, and broth.
  7. Pour the sauce mixture into the cooked meat and simmer for 2–3 minutes.
  8. Add cooked noodles to the pan and toss well to coat in the sauce.
  9. Serve topped with green onions and crushed peanuts.
