Ingredients
- 300 g fresh or dried noodles
- 200 g ground pork (or beef)
- 2 tablespoons oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon Shaoxing wine (optional)
- 1 tablespoon chili oil
- 1 tablespoon sesame paste or peanut butter
- 1 teaspoon Sichuan peppercorns, ground
- 1 teaspoon sugar
- 1/2 cup chicken or vegetable broth
- 2 tablespoons preserved mustard greens (optional)
- 2 green onions, sliced
- Crushed peanuts (for garnish)

Instructions
- Cook the noodles according to package instructions, then drain and set aside.
- Heat oil in a pan over medium heat.
- Add garlic and ginger, sautéing until fragrant.
- Add ground pork and cook until browned, breaking it apart.
- Stir in soy sauce, Shaoxing wine, and preserved mustard greens if using.
- In a bowl, mix chili oil, sesame paste, sugar, Sichuan peppercorns, and broth.
- Pour the sauce mixture into the cooked meat and simmer for 2–3 minutes.
- Add cooked noodles to the pan and toss well to coat in the sauce.
- Serve topped with green onions and crushed peanuts.
