Slow Cooker Poor Man's Stew

Ingredients

  1. 17.9 ounces ground beef
  2. 3 potatoes, cubed
  3. 2 carrots, sliced
  4. 1 onion, diced
  5. 14.3 ounces canned diced tomatoes
  6. 2 cups beef stock
  7. 2 tablespoons tomato paste
  8. 3 garlic cloves, minced
  9. 1 tablespoon Worcestershire sauce
  10. 1 pinch salt and black pepper

Instructions

  1. Brown the ground beef in a pan over medium-high heat, breaking it apart, then drain excess fat and transfer it to the slow cooker.
  2. Add the potatoes, carrots, onion, and garlic.
  3. Pour in the diced tomatoes, beef stock, tomato paste, and Worcestershire sauce.
  4. Season with salt and black pepper, then stir well to combine.
  5. Cover and cook on low for 7–8 hours or on high for 4 hours, until the potatoes are tender and the broth has thickened into a rich stew.
  6. Taste, adjust seasoning, and serve hot with crusty bread.
