Slow Cooker Poor Man's Stew Servings: 4

Ingredients
- 17.9 ounces ground beef
- 3 potatoes, cubed
- 2 carrots, sliced
- 1 onion, diced
- 14.3 ounces canned diced tomatoes
- 2 cups beef stock
- 2 tablespoons tomato paste
- 3 garlic cloves, minced
- 1 tablespoon Worcestershire sauce
- 1 pinch salt and black pepper

Instructions
- Brown the ground beef in a pan over medium-high heat, breaking it apart, then drain excess fat and transfer it to the slow cooker.
- Add the potatoes, carrots, onion, and garlic.
- Pour in the diced tomatoes, beef stock, tomato paste, and Worcestershire sauce.
- Season with salt and black pepper, then stir well to combine.
- Cover and cook on low for 7–8 hours or on high for 4 hours, until the potatoes are tender and the broth has thickened into a rich stew.
- Taste, adjust seasoning, and serve hot with crusty bread.
