Slow Cooker Lemon Butter Chicken

Ingredients

  1. 1kg boneless chicken thighs
  2. 4 tablespoons unsalted butter
  3. 3 tablespoons fresh lemon juice
  4. 1 tablespoon lemon zest
  5. 4 garlic cloves, minced
  6. 1/2 cup chicken broth
  7. 1 teaspoon dried thyme
  8. 1 pinch salt and black pepper
  9. 2 tablespoons fresh parsley, chopped

Instructions

  1. Place the chicken thighs in the slow cooker and season with salt and black pepper.
  2. Dot the butter over the chicken, then pour in the chicken broth and lemon juice.
  3. Add the garlic, lemon zest, and dried thyme.
  4. Cover and cook on LOW for 7 hours or HIGH for 3 hours, until the chicken is tender and the sauce is smooth and lemony.
  5. Spoon the sauce over the chicken, sprinkle with fresh parsley, and serve over mashed potatoes, rice, or crusty bread.
