Slow Cooker Lemon Butter Chicken

Ingredients
- 1kg boneless chicken thighs
- 4 tablespoons unsalted butter
- 3 tablespoons fresh lemon juice
- 1 tablespoon lemon zest
- 4 garlic cloves, minced
- 1/2 cup chicken broth
- 1 teaspoon dried thyme
- 1 pinch salt and black pepper
- 2 tablespoons fresh parsley, chopped

Instructions
- Place the chicken thighs in the slow cooker and season with salt and black pepper.
- Dot the butter over the chicken, then pour in the chicken broth and lemon juice.
- Add the garlic, lemon zest, and dried thyme.
- Cover and cook on LOW for 7 hours or HIGH for 3 hours, until the chicken is tender and the sauce is smooth and lemony.
- Spoon the sauce over the chicken, sprinkle with fresh parsley, and serve over mashed potatoes, rice, or crusty bread.
