Slow Cooker Honey Teriyaki Chicken

Ingredients
- 25 ounces boneless skinless chicken thighs
- 4 tablespoons soy sauce
- 3 tablespoons honey
- 3 pieces garlic cloves, minced
- 1 teaspoons fresh ginger, grated
- 1 tablespoons rice vinegar
- 1 teaspoons sesame oil
- 2 tablespoons cornstarch
- 1 tablespoons sesame seeds & sliced spring onions

Instructions
- Mix & Slow Cook: Whisk together 4 tablespoons soy sauce, 3 tablespoons honey, 3 pieces garlic cloves, minced, 1 teaspoons fresh ginger, grated, 1 tablespoons rice vinegar, and 1 teaspoons sesame oil in the slow cooker.
- Add 25 ounces boneless skinless chicken thighs, coat well, cover and cook on low for 7 hours or high for 3 hours until the chicken is fall-apart tender.
- Lift the chicken out and shred it with two forks.
- Stir 2 tablespoons cornstarch mixed with a splash of cold water into the remaining juices, then return the shredded chicken and stir everything together until the sauce turns gloriously thick and glossy.
- Scatter over 1 tablespoons sesame seeds & sliced spring onions and serve straight over steamed rice or noodles.
