Ingredients

  1. 8 thick beef or pork sausages
  2. 1 brown onion, sliced
  3. 3 garlic cloves, minced
  4. 2 tablespoons curry powder
  5. 14.3 ounces diced tomatoes (canned)
  6. 1 cup chicken stock
  7. 0.5 cup coconut milk
  8. 1 cup frozen peas
  9. 1 pinch salt and pepper

Instructions

  1. Scatter the sliced onion and minced garlic across the bottom of the slow cooker.
  2. Lay the sausages on top, then sprinkle with curry powder and season with salt and pepper.
  3. Pour in the diced tomatoes and chicken stock, gently stir around the sausages, cover, and cook on LOW for 6 hours or HIGH for 3 hours until the sausages are tender and the sauce is rich.
  4. During the last 15 minutes, stir in the coconut milk and frozen peas, letting everything heat through.
  5. Serve hot over steamed rice or mashed potatoes.
