Ingredients
- 8 thick beef or pork sausages
- 1 brown onion, sliced
- 3 garlic cloves, minced
- 2 tablespoons curry powder
- 14.3 ounces diced tomatoes (canned)
- 1 cup chicken stock
- 0.5 cup coconut milk
- 1 cup frozen peas
- 1 pinch salt and pepper

Instructions
- Scatter the sliced onion and minced garlic across the bottom of the slow cooker.
- Lay the sausages on top, then sprinkle with curry powder and season with salt and pepper.
- Pour in the diced tomatoes and chicken stock, gently stir around the sausages, cover, and cook on LOW for 6 hours or HIGH for 3 hours until the sausages are tender and the sauce is rich.
- During the last 15 minutes, stir in the coconut milk and frozen peas, letting everything heat through.
- Serve hot over steamed rice or mashed potatoes.
