Ingredients
- 1kg beef chuck, sliced into strips
- 3 garlic cloves, minced
- 1 brown onion, sliced
- 1 red capsicum, sliced
- 3 tablespoons black bean sauce
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 0.5 cup beef stock
- 1 tablespoon cornstarch
- 1 teaspoon fresh ginger, grated

Instructions
- Place the sliced onion, minced garlic, and grated ginger into the slow cooker.
- Add the beef on top.
- In a bowl, whisk together the black bean sauce, soy sauce, sesame oil, and beef stock, then pour over the beef.
- Add the sliced capsicum, cover, and cook on LOW for 8 hours or HIGH for 3.5 hours until the beef is tender.
- Mix the cornstarch with a little cold water, stir it in, and cook uncovered for 15 minutes until the sauce thickens.
- Serve over steamed jasmine rice.
