Slow Cooker Beef in Black Bean Sauce

Ingredients

  1. 1kg beef chuck, sliced into strips
  2. 3 garlic cloves, minced
  3. 1 brown onion, sliced
  4. 1 red capsicum, sliced
  5. 3 tablespoons black bean sauce
  6. 2 tablespoons soy sauce
  7. 1 tablespoon sesame oil
  8. 0.5 cup beef stock
  9. 1 tablespoon cornstarch
  10. 1 teaspoon fresh ginger, grated

Instructions

  1. Place the sliced onion, minced garlic, and grated ginger into the slow cooker.
  2. Add the beef on top.
  3. In a bowl, whisk together the black bean sauce, soy sauce, sesame oil, and beef stock, then pour over the beef.
  4. Add the sliced capsicum, cover, and cook on LOW for 8 hours or HIGH for 3.5 hours until the beef is tender.
  5. Mix the cornstarch with a little cold water, stir it in, and cook uncovered for 15 minutes until the sauce thickens.
  6. Serve over steamed jasmine rice.
