Honey Cranberry Chicken Bake with Ricotta Cheese & Spinach Servings: 2-3

Ingredients:
For the Chicken Bake:
- 2 large chicken breasts, cut into chunks
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp paprika
- 2 tbsp honey
For the Filling: - 1/2 cup ricotta cheese
- 1 cup fresh spinach, chopped
- 1/4 cup dried cranberries
For Garnish / Serving: - Fresh parsley, chopped
- Optional: extra honey drizzle

Instructions:
Prepare the Chicken:
- Preheat the oven to 375°F (190°C)
- In a bowl, combine olive oil, garlic, salt, black pepper, and paprika
- Add chicken chunks and toss to coat evenly
Prepare the Filling: - In a small bowl, mix ricotta cheese, chopped spinach, and dried cranberries
Assemble the Bake: - Place chicken chunks in a baking dish
- Spoon ricotta-spinach-cranberry mixture over the chicken
- Drizzle honey evenly on top
Bake: - Bake in preheated oven for 25–30 minutes, until chicken is fully cooked
- Remove from oven and let rest for 5 minutes
Serve: - Garnish with chopped parsley
- Optional: drizzle extra honey over the top
