Honey Cranberry Chicken Bake with Ricotta Cheese & Spinach

Servings: 2-3

Ingredients:


For the Chicken Bake:
  1. 2 large chicken breasts, cut into chunks
  2. 2 tbsp olive oil
  3. 2 cloves garlic, minced
  4. 1/2 tsp salt
  5. 1/4 tsp black pepper
  6. 1/2 tsp paprika
  7. 2 tbsp honey

For the Filling:
  1. 1/2 cup ricotta cheese
  2. 1 cup fresh spinach, chopped
  3. 1/4 cup dried cranberries

For Garnish / Serving:
  1. Fresh parsley, chopped
  2. Optional: extra honey drizzle

Instructions:


Prepare the Chicken:
  1. Preheat the oven to 375°F (190°C)
  2. In a bowl, combine olive oil, garlic, salt, black pepper, and paprika
  3. Add chicken chunks and toss to coat evenly

Prepare the Filling:
  1. In a small bowl, mix ricotta cheese, chopped spinach, and dried cranberries

Assemble the Bake:
  1. Place chicken chunks in a baking dish
  2. Spoon ricotta-spinach-cranberry mixture over the chicken
  3. Drizzle honey evenly on top

Bake:
  1. Bake in preheated oven for 25–30 minutes, until chicken is fully cooked
  2. Remove from oven and let rest for 5 minutes

Serve:
  1. Garnish with chopped parsley
  2. Optional: drizzle extra honey over the top
