Glossy Ginger-Garlic Beef Stir Fry with Crisp Veggies & Edamame Delight

Servings: 4

Ingredients:

  1. 400 g lean beef strips
  2. 1 tablespoon sesame oil
  3. 1 tablespoon olive oil
  4. 2 cups broccoli florets
  5. 1 red bell pepper, sliced
  6. 1 yellow bell pepper, sliced
  7. 1 cup shredded carrots
  8. 1 cup shelled edamame
  9. 3 cloves garlic, minced
  10. 1 tablespoon fresh ginger, grated
  11. 3 tablespoons low-sodium soy sauce
  12. 1 tablespoon honey
  13. 1 tablespoon rice vinegar
  14. 1 teaspoon cornstarch (optional, for thickening)
  15. 2 tablespoons water
  16. 1 teaspoon chili flakes (optional)
  17. 2 tablespoons chopped scallions
  18. 1 tablespoon sesame seeds
  19. Cooked jasmine rice or cauliflower rice, for serving

Instructions:

  1. Heat olive oil and sesame oil in a large skillet or wok over medium-high heat.
  2. Add the beef strips and stir-fry for 3–4 minutes until browned and cooked through. Remove and set aside.
  3. In the same pan, add garlic and ginger, sautéing for about 30 seconds until fragrant.
  4. Add broccoli, bell peppers, carrots, and edamame. Stir-fry for 4–5 minutes until vegetables are crisp-tender.
  5. In a small bowl, mix soy sauce, honey, rice vinegar, water, and cornstarch.
  6. Return the beef to the skillet and pour in the sauce mixture.
  7. Toss everything together and cook for 2–3 minutes until the sauce thickens and coats the ingredients with a glossy glaze.
  8. Sprinkle with chili flakes if desired and stir gently.
  9. Remove from heat and garnish with scallions and sesame seeds.
  10. Serve hot over jasmine rice or cauliflower rice.
