Glossy Ginger-Garlic Beef Stir Fry with Crisp Veggies & Edamame Delight Servings: 4

Ingredients:
- 400 g lean beef strips
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup shredded carrots
- 1 cup shelled edamame
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon cornstarch (optional, for thickening)
- 2 tablespoons water
- 1 teaspoon chili flakes (optional)
- 2 tablespoons chopped scallions
- 1 tablespoon sesame seeds
- Cooked jasmine rice or cauliflower rice, for serving

Instructions:
- Heat olive oil and sesame oil in a large skillet or wok over medium-high heat.
- Add the beef strips and stir-fry for 3–4 minutes until browned and cooked through. Remove and set aside.
- In the same pan, add garlic and ginger, sautéing for about 30 seconds until fragrant.
- Add broccoli, bell peppers, carrots, and edamame. Stir-fry for 4–5 minutes until vegetables are crisp-tender.
- In a small bowl, mix soy sauce, honey, rice vinegar, water, and cornstarch.
- Return the beef to the skillet and pour in the sauce mixture.
- Toss everything together and cook for 2–3 minutes until the sauce thickens and coats the ingredients with a glossy glaze.
- Sprinkle with chili flakes if desired and stir gently.
- Remove from heat and garnish with scallions and sesame seeds.
- Serve hot over jasmine rice or cauliflower rice.
