Creamy Chicken Bacon Stroganoff with Caramelized Onions, Roasted Red Peppers & Parmesan Shavings

Ingredients

  1. 2 chicken breasts, sliced
  2. 6 strips bacon, chopped
  3. 1 onion, thinly sliced
  4. 1 cup roasted red peppers, sliced
  5. 3 cloves garlic, minced
  6. 1 cup mushrooms, sliced
  7. 1 cup chicken broth
  8. 1 cup heavy cream
  9. 2 tablespoons sour cream
  10. 1 tablespoon Dijon mustard
  11. 1 teaspoon paprika
  12. Salt and pepper to taste
  13. 250g pasta (penne or fettuccine)
  14. 1/4 cup shaved parmesan
  15. Fresh parsley, chopped

For the fries:
  1. 3 large potatoes, cut into fries
  2. 2 tablespoons olive oil
  3. Salt to taste

Instructions

  1. In a skillet, cook bacon until crispy. Remove and set aside, leaving some fat in the pan.
  2. Add onions to the skillet and cook slowly until caramelized and golden. Set aside.
  3. Place chicken, garlic, mushrooms, roasted red peppers, and chicken broth into a slow cooker.
  4. Season with paprika, salt, and pepper. Cook on low for 4–5 hours or until chicken is tender.
  5. Stir in heavy cream, sour cream, Dijon mustard, cooked bacon, and caramelized onions. Let cook for another 20–30 minutes until creamy and rich.
  6. Meanwhile, toss fries with olive oil and salt, then bake at 220°C (425°F) for 25–30 minutes until golden and crispy.
  7. Cook pasta according to package instructions. Drain and set aside.
  8. Combine pasta with the creamy stroganoff sauce or serve sauce over pasta.
  9. Garnish with parmesan shavings and fresh parsley.
  10. Serve hot with crispy fries on the side for the ultimate comfort meal.
